Plating Truffle Flavor for Cheddar Chip Seasoning

Objective: To evenly distribute Essence of Truffle clear to light-yellow liquid extract into a dry white cheddar cheese seasoning base — creating a uniform, free-flowing powder for application on freshly fried potato chips.

Phase 1 Formulation & Dilution
  1. Calculate Usage: Determine your batch size. Start with the recommended rate of 1–3 mL per liter of carrier oil or finished product. Adjust based on desired truffle intensity.
  2. Dilute for Spraying: Mix the measured extract into a high-stability, food-grade neutral carrier oil — high-oleic sunflower oil is recommended — to ensure even distribution across the large cheddar powder batch.
Phase 2 Atomization & Plating
  1. Load the Dry Base: Load your aged white cheddar cheese powder, fine salt, and any maltodextrin or dextrose flow agents into a ribbon blender or industrial paddle mixer.
  2. Atomize the Flavor: While the mixer is running, use an atomizing spray nozzle to introduce the diluted truffle oil mixture over the moving cheese powder. This “plating” process turns the oil-soluble liquid into an intensely flavored free-flowing dry cheese powder.
