Concentrated enough that a single bottle covers multiple gallons of finished product.

How To Use

  1. Measure the extract for your batch size (see table above).

Crafted For Professionals

Essence of Truffle is built for chefs, product developers, and food manufacturers who need the same truffle flavor every batch. Unlike fresh truffles, which vary in strength, price, and availability, our extract is standardized, so a recipe that works at 1 liter works at 1,000. See how manufacturers use it on our industrial food processing page.

Product Applications

Use it to make truffle oil, butter, aioli, mayonnaise, sauces, cheese, chips, seasonings, and snack coatings. Blend at about 2 mL per liter of oil or finished product, adding it after any heat step. For step-by-step production guides, browse our manufacturing SOPs.

Aroma

Earthy and deep, with notes of damp forest, aged wood, a touch of garlic, and a warm roasted, nutty finish. The aroma is strongest when the extract is added after cooking or used in cold applications.

Tasting Notes

Rich, savory, and soil-like, with meaty depth, subtle garlic, and a warm roasted finish. Best with steak, burgers, potatoes, mushrooms, pasta, and snacks. Want a sharper, garlic-forward note? Compare our white truffle extract.

Truffle Extract FAQ

What is truffle essence?
Truffle essence is a concentrated, oil-soluble truffle aroma compound supplied undiluted. You blend it into your own oil or base at your own ratio, which gives you full control over the finished flavor.
How much truffle extract should I use?
Use 1 to 3 mL per liter of carrier oil or finished product. Most users start at 2 mL per liter, about 7.6 mL per gallon. Start low and adjust up, since it's easy to add more and impossible to take it back out.
How is this different from truffle oil?
Truffle oil is a finished, diluted product. This is the concentrate you make truffle oil from. A single 1 oz bottle makes about 4 gallons of truffle oil at standard dosing. See our truffle oil manufacturing guide for batch ratios.
What can I use it in?
Oils, butters, aioli, mayonnaise, sauces, dressings, cheese, dry seasonings, and snack coatings. Manufacturers can find production SOPs on our food manufacturers page.
Is it vegan and clean label?
Yes. The concentrate is vegan and clean label, and requires no allergen statement.
How should I store it?
It's shelf stable and needs no refrigeration. Keep the bottle tightly sealed in a cool, dark place away from direct sunlight.
Black or white truffle, which should I choose?
Black truffle is earthy, roasted, and deep, great for steak, pasta, potatoes, and mushrooms. White truffle is sharper, garlicky, and bright, great for finishing oils, risotto, and eggs. Not sure? Order a 5 mL sample of each.
Do you offer wholesale or larger sizes?
Yes. Online sizes run from 5 mL samples to 32 oz bulk, and approved wholesale accounts can order up to 55-gallon drums. Contact us for wholesale pricing.
Where is it made?
Essence of Truffle is made in the USA and ships from Shelby, Indiana.
